Dublin is where Irish pot still whiskey was born — and after a long sleep, the city is distilling again with serious intent. A wave of craft distillers in the historic Liberties and beyond are reviving the spicy, rich, oily pot still character that once made this city the whiskey capital of the world. Your spirit matures in first-fill ex-bourbon throughout. During the final period, it’s moved into your chosen finishing cask — where it takes on an entirely new dimension of character.
Chablis
White Burgundy · France
From the northernmost wine district of Burgundy, Chablis is celebrated for its crisp acidity and distinctive mineral, ‘flinty’ character. In the cask, this translates to elegant citrus lift, green apple and a clean, precise finish.
Sherry
Oloroso · Jerez, Spain
Oloroso — meaning ‘scented’ — is a deeply oxidative, fortified wine from Jerez. Dark, rich and nutty, its character transforms whiskey with waves of dried fruit, dark chocolate, hazelnuts and warming spice.
Port
Ruby Port · Douro Valley, Portugal
Ruby Port is sweet, rich and intensely fruity. Port casks contribute vivid red berry character — plum, cherry, raspberry — along with a natural sweetness and a silky, extraordinary finish. Your whiskey will deepen in colour remarkably.
Red Wine
Full-bodied red wine cask
Where Sherry is rich and dark, a Red Wine finish is more vibrant and fruit-forward — juicy berry character, fine tannins and a beautiful garnet hue in the glass. Elegant, approachable and genuinely surprising.

How Long Will You Wait?
Time in the cask shapes everything. Your maturation period is locked in at reservation and shared across your cohort group. The longer the wait, the deeper the reward.

At five years, spirit and cask have truly found each other. The harsh edges of new spirit are long gone — replaced by the first confident waves of vanilla, caramel and fruit from the oak. A well-formed, expressive Irish whiskey.
